1.Right-click the Sales Mix group , point to Add, and then click Sales Mix. A new Sales Mix node will be created in the Sales Mix group. 2.In the Property Editor: a.In the Name field, enter a descriptive name for the new Sales Mix. b.In the Price Group By list, select Sales Mix to use one price group for the entire Sales Mix node; Ticket to use one price group per ticket within the Sales Mix node; or Selection to use one price group per menu selection within each ticket. c.If you use price groups and want to assign one to the entire Sales Mix, in the Price Group list, select a price group. d.If you use SpeedLine Inventory, select Add Sales Mix Tickets at Day End to add the Sales Mix tickets to the DayFile when day end is run. This will allow you to run a Product Margin report from Store Manager to give food cost information for each product in the mix. e.If you use tags for database queries, in the Tags list, select the tag for this Sales Mix.

Note The Store Groups tab is only available if you have entered store groups in the menu root.

f.If your organization uses store groups to manage a corporate menu, click the Store Groups tab, and select the check boxes beside the store groups that you want to include items from. This helps ensure that errors are not caused by including items that may be inactive at certain stores. The # Selections line displays the total number of menu selections that have been entered into the Sales Mix.
3.Right-click the new Sales Mix node, and then click Set Up to open the Sales Mix Designer.

1.In the Setup area, right-click a ticket, point to Add, and then click Menu Selection. A New Selection will be added to the ticket. 2.In the Item field located at the bottom-left of the menu, click the Browse button , select a menu item from the list, and then click OK. 3.In the Quantity field, type or select the menu item quantity. 4.If the menu item is sized, select the size from the Size list. 5.If you use price groups and want to assign one to the menu selection, select it from the Price Group list. 6.To test for differences between the calculated price of the item and a target price [The total intended price of a menu selection, taking into account quantity. For example, if the selection has a quantity of one, the target could be the price on your printed menu, or the price you have determined to be correct, or the price needed to give you a certain profit margin.], in the Target Price field, enter a price.

Note When setting a target price, take into account quantities greater than one, and any special bulk pricing. For example, if you specify a quantity of 3 medium pizzas and the target price of each pizza is $10, enter 30 in the Target Price field; if the third pizza is $5 because of bulk pricing, enter 25.

7.Select a tax group from the Target Tax Group list. 8.If you use tags for SQL database queries, in the Tags list, select the tag to identify this menu selection.

Hint Use the Go To button to jump to the item's location in the menu.

Once you have added a menu selection to a ticket in the Sales Mix Designer, you can modify it just as a customer might by adding or removing modifiers (A Modifier is a choice that is applied to a menu item, such as a pepperoni topping on a pizza.. This is great for testing topping weights and prices on CYO items, or for testing meal deal combinations.
1.Right-click on a menu selection, point to Add, and then click Modifiers. 2.Check the modifiers you want to add and click OK. 3.Select the action of the modifier by clicking on it in the Setup area and selecting an action from the Action list located at the bottom-left of the screen.

Important Modifier actions are available only if they have been created in the Modifier Types tab.

1.In the Sales Mix Designer under the Setup area, right-click on a menu selection, point to Add, and then click Portion. 2.Check the portions from the list and click OK.

To edit a Portion, click on the it and then select a new portion from the Portion list located at the bottom-left of the window.

6. Test the Sales Mix to see differences between target and calculated pricing (and ideal usage and food cost, if you are using SpeedLine Inventory).
