The settings described below apply to all buffets. Configuring these settings is the first step in setting up buffet planning.

1.Go to the Settings> System> Operations Planning icon_opsPlanning> Buffet Setup tab.

2.Select the Active check box to activate Buffet Planning.

3.Select an order type from the Buffet Order Type list. Sales of buffets will be classified with this order type in sales forecasts and reports.

4.Select a Buffet consumption based on option:  

The Projected option estimates buffet usage based on buffet consumption factors you enter, and the items listed on the buffet template. The accuracy of the buffet plan will depend on the accuracy of these consumption factors. If you are using SpeedLine Inventory, this setting is not recommended, unless you are confident that your buffet consumption factors are very accurate. Actual buffet usage does not have to be entered in Terminal when using this option.

The Entry option requires that the actual buffet usage (the quantities of all food items used during a buffet) be entered into Terminal before running day end. This option is recommended if you are using SpeedLine Inventory, as it will provide the system with actual usage figures to compare to ideal usage, and will ensure accurate food cost figures. If you select the Entry option, you do not need to enter anything on the Buffet Consumption tab.
